I make an awesome chili and over the years, have invented many new variations — mostly because I never know exactly what ingredients I have on hand until I start digging around in my cupboards and the fridge! In this recipe, I happened to have some cooked, leftover hamburger and some bacon that needed to be cooked. You could easily add chopped roast beef, shredded pork or chicken, sliced kielbasa or sausage — any leftover meat you happen to have on hand.
I was really happy with the way this turned out. I hope you enjoy it, too!
Ingredients
2 lbs. hamburger
1 lb. bacon, cooked and crumbled
½ onion, chopped
1 can white beans
1 can northern beans
1 can black beans
(or any other 3 cans of beans)
1 14 oz. can petite chopped tomatoes
1 can tomato paste
1 can Ro-tel tomatoes (I use the spicier, Original version.)
½ t. garlic powder
1 T. chili powder
½ t. black pepper
½ t. cumin
1-2 t. salt
1 small can tomatillo salsa
2 bean cans filled with water
Instructions
In a large pot, cook onion in a little olive oil until tender. Add ground beef and cook until browned, if it isn’t already cooked. Drain beans in a colander, rinse, and add to the meat mixture. Add all remaining ingredients. Stir and cook until thoroughly heated.
