INSTANT SURVIVAL TIP: Choosy Moms Choose Veggies

I love to make soups and stews year-round but especially during the winter months. When I first began my food storage, the veggies I rounded up first were those I usually include in these dishes: carrots, potatoes, celery, corn and green beans. With this group of vegetables, I can make my favorite Italian Meatball Soup with my choice of either frozen, dehydrated, freeze dried or canned veggies.
Look over your own favorite recipes that include vegetables and determine which veggies you use most in your cooking. If you can grow some of these, great. Dehydrate and can your own freshly grown produce. Otherwise, begin buying them in a variety of forms: canned (unless your family really dislikes the flavor and texture of canned veggies), frozen (great for nutrients but not so great in an electrical outage), dehydrated (you can easily do this yourself) and freeze-dried (more expensive but lightweight and easy to store long-term). Just remember to begin with vegetables you already use, so when you need to dip into your food storage bank, you can continue making your family’s favorite dishes.
